When planning the party I was stumped with what to do for party favors. I didn't want to do bags of plastic junk. I know the kids love the little toys, but my house is overwhelmed with little pieces of plastic and I didn't want to overwhelm anyone else's house, plus I knew a portion of what ever I got would be staying at my house. After giving it some thought I decided to have the girls make their own party favors and what could be better than some candy covered caramel apples. <br />

With all the other party preparations that needed to be done I didn't want to have to worry about making caramel. So, I used <a href="http://wertherscaramelshoppe.com/?page=3">Werther's new baking caramels</a>. These caramels are a delicious addition to Werther's line of candies and were perfect the perfect coating for the apples. The caramel melted evenly, was wonderfully smooth and easy to use. Their ease and taste could easily convince me to never make caramel from scratch again. <br />

While I loved the idea of having the girls make the caramel apples I was a little worried about the process. I didn't want any of the girls to get burned on the caramel, but I still wanted them to experience the joy of watching a giant apple get submerged in a pot of golden caramel - it really is a beautiful thing. By keeping the caramel off to the side and having all the toppings in buckets that could easily be passed around, the girls were able to gather around and decorate - and munch - to their hearts content. Making it enjoyable for all. <br />

We put out a lot of toppings for the girls to choose from - pecans, coconut, candy corn, marshmallows, candy eyes, sprinkles, m&m, chocolate chips, peanut putter chips and crushed pretzels. The coconut was a flop, I kind of thought it would be especially once I heard one of the girls ask why they would want Parmesan cheese on their apples. The rest of the toppings were big hits, a few of the girls even add a couple of extra scoops to the containers as we were packaging the apples, not to mention the handfuls that were eaten while they were making the apples. <br />

While my plan was for the girls to take home beautifully decorated apples to share with their families, most of the apples didn't make it that far. And, many of the girls brought home apples that were half eaten, and by half eaten I mean all the toppings were eaten off. <br />

We went all out and had tons of fun and tasty treats for the girls, but the most popular snack was the <a href="http://wertherscaramelshoppe.com/post/107/new-werthers-original-caramel-popcorn">Werther's Caramel Popcorn</a>. On it's own this caramel popcorn is delicious. In fact it is so good there may be a bag hidden in my pantry that may or may not be shared with the rest of the family. While the caramel popcorn is great on its own add a few m&m's, some nuts and a little dried fruit and you have a snack mix that will disappear in the blink of an eye. <br />

So, as soon as I saw the <a href="http://www.vanderbiltwife.com/">Vanderbilt Wife</a> had a recipe for pumpkin cookies, I knew immediately what I would be making for this month's <a href="http://secretrecipeclub.com/">Secret Recipe Club</a> reveal. <br />

This is a wonderful recipe and makes a super soft and moist cookie. I changed the recipe up slightly, by using a half cup of brown sugar and a half cup of regular sugar instead of using just regular sugar. I didn't make any other changes to the recipe, but the addition of some cinnamon, ginger or nutmeg would be great. <br />
The cookies were great on their own, but the icing on top is, well, icing on the <strike>cake</strike> cookie. <br />

These cookies just scream fall and hopefully the weather around here will turn back to fall soon so I can make another batch to enjoy with a cup of tea. They will make a great breakfast, lunch or snack. The perfect anytime cookie. <br />

Between end of summer craziness and beginning of the school year craziness I don't think I have been to the grocery store more than a handful of times. As a result my pantry shelves are a little bare. So, when I came across a recipe for <a href="http://easilygoodeats.blogspot.com/2010/12/3-ingredient-oatmeal-cookies.html">3 Ingredient Cookies</a> on <a href="http://three-cookies.blogspot.com/">Three Cookies</a> blog I knew I had found my recipe for this months reveal. <br />

This cookie was developed as a result of a craving and a limited amount of ingredients in the pantry and it just called my name. In the spirit of the recipe I did change it up a bit based on what was available in the pantry and what I was craving. I added some peanut butter, so I guess my recipe is technically a 4 ingredient cookie, and I wanted to add some chocolate chips, but as I said my pantry was bare and I was out of chips.<br />

There certainly isn't anything fancy about these cookies, but they are the perfect cookie when a cookie craving hits. They make a great midnight snack and are perfect after school. What is even better is that those little people who are looking for the after-school treat can make these little cookies with little to no assistance. These are very forgivable cookies so measuring mistakes won't ruin them. The ingredients are familiar and there is flexibility in the ingredients being used to accommodate those with varying taste buds.<br />

1/4 cup peanut butter<br />

1 cup old fashioned oats<br />

Preheat oven to 350. In mixing bowl combine all ingredients. Stir until combined. Drop heaping teaspoon on to parchment lined baking sheet. Bake for 8-10 minutes or until just firm. <br />

After decorating the girls enjoyed some snacks and played games. The ice cream came out when the moms came to pick the girls up, so moms, girls and siblings got to enjoy this delicious treat. While I usually don't believe in messing with perfection, and Cadbury Ice Cream bars are pretty perfect just the way they are, I did jazz up some of the bars. A brushing of strawberry syrup, recipe below, and then a quick dunk in a bowl of sprinkles made these already wonderful treats even more festive. <br />

<li>1 tablespoon sugar</li>
<li>8 bars Blue Bunny Cadbury Royal Dark ice cream bars, unwrapped</li>
<li>1 cup sprinkles (or your favorite topping - chopped nuts, flaked coconut, chocolate candies, etc.)</li>

<li>Line a small baking sheet with wax paper, set aside. Pour sprinkles into a flat dish, set aside</li>
<li>In a blender or food processor combine strawberries, sugar and cornstarch, blend until smooth. </li>
<li>Brush strawberry puree over all sides of ice cream bars. Gently press bars into bowl of sprinkles, coating completely. Place on baking sheet. Chill bars for at least 30 minutes before serving.</li>

Between the blogs I have been assigned and those I visit on reveal day I have checked out a lot of blogs, yet there are always new ones to discover. And that was the case with this month's assignment. I am not sure how I haven't come across Camilla's blog before, but I will definitely be going back there on a regular basis. <br />

Just as the name implies, <a href="http://culinary-adventures-with-cam.blogspot.com/">Culinary Adventures with Camilla</a> is filled with great recipes and great adventures. Food isn't just enjoyed at home, but experienced in many places and ways. She talks about picking cherries and olallieberries (a fruit I'm not familiar with) with her kids, food is incorporated into <a href="http://culinary-adventures-with-cam.blogspot.com/2013/06/camilla-dreams-of-onigiri-foodnflix.html">movies</a> and she has a great collection Cooking Around the World recipes. But what I love most is that she is passing her love of cooking and food on to her kids. I love her goal to "grow conscientious, creative kids with fearless palates." and would say it seems she is definitely achieving it.<br />

When it came time to actually making something I had trouble narrowing it down, so I combined a couple of different recipes. My first choice was the <a href="http://culinary-adventures-with-cam.blogspot.com/2013/06/herbed-potato-onion-galettes.html">Herb Potato Onion Galette</a>. It had been a long time since I made a Galette. It is one of those foods that I forget about and then become obsessed with, I love dishes that can be either sweet or savory and can easily substitute or swap ingredients, plus I had a lot of potatoes that needed to be used. I also wanted to try Camilla's <a href="http://culinary-adventures-with-cam.blogspot.com/2013/06/kale-garlic-turkey-meatballs.html">Kale Garlic Turkey Meatballs</a>, again I had some kale that needed to be used up. So, instead of deciding between the two I made both, resulting in a delicious Turkey Potato Galette.<br />

When I made this the first time, I cooked everything separately, but found that to time consuming. I made a second batch this time cooking the potatoes and onions together and cooking the turkey and kale together. Not only is this faster, but it also helps bring all the flavors together. <br />

With so much fresh fruit coming in what can you do, but make cobbler, every night if necessary. It's fruit so it's healthy and makes nightly dessert perfectly acceptable. I usually make cobbler with either a crumb or biscuit topping, but for one of my first cobblers of the season I decided to try out a new recipe. This recipe was more cake like, which I wasn't sure about at first. I was really looking forward to a juicy flaky biscuit and wasn't sure how I felt about this new type of cobbler, but after a few bites I decided it was definitely acceptable and will be working this recipe into my cobbler rotation.<br />

They don't love it and you certainly won't hear them begging for it, but they will eat a piece or two if properly presented. The is problem I love eggplant and am always looking for ways to have it without having a lot of "whine" with it. And while I don't like hiding food and tricking them it is necessary to be creative at times.<br />

I was watching Food Network one Saturday morning and Rachel Ray was making an eggplant lasagna, but she wasn't making it using thinly sliced eggplant. She was making it with baked and pureed eggplant. It was one of those moments duh moments for me, how had this never occurred to me. Pureed eggplant and ricotta cheese have a very similar consistency. Mix them together and you can easily fool even those with the biggest aversion to this yummy, yet under appreciated veggie.<br />

This is a dish that definitely requires patience, but once I got into the groove of it I actually found it rather therapeutic and calming to make. How can you not relax and just enjoy life when painting with butter. I also made sure I didn't rush when working with the Phyllo dough. I allowed the dough to completely defrost before working with it and kept it covered with a damp cloth while working with it. This helped ensure it didn't rip into tiny pieces while working with it, which has been the source of much frustration in the past.<br />
<br />
While there aren't a lot of ingredients in Baklava - phyllo, nuts and simple syrup - the flavor can vary greatly depending on what nuts you choose to put in the filling and what type of honey you use in the syrup.<br />
<br />
In order to love Baklava you have to be a nut lover. There are some recipes that add chocolate pieces or dried fruit, but most of the recipes I came across contained just nuts. Most recipes used a combination of different types, but some recipes use just one type. I used a combination of walnuts, pecans and almonds with a few pistachios thrown in, but you can use any combination and it will be delicious. <br />

The syrup which binds everything together is very simple - honey, sugar, water - but the flavor can vary greatly based on the type of honey used. I get my honey from a small health food store that sells local honey. It is a wonderfully delicious honey, but for me the real joy of this honey is watching the golden honey come out of a huge vat as they refill your container. If you don't have access to local honey a lavender honey is a good option or you can use a regular honey and add some orange zest to the syrup. Again you really can't make a bad choice when making the syrup. And if you have to make numerous batches to decide on you favorite combination of nuts and syrup flavoring, that is a sacrifice worth making. <br />

Make sure the sheets of phyllo are about the same size as the pan, trim to size if needed. While working with phyllo only remove the sheet you immediately need, keep the rest covered in plastic with a damp cloth over it.</li>

Grab two more sheets, brush one side with butter and place in pan butter side up. Repeat process one more time, for a total of six sheets of phyllo, three of which have been buttered. Sprinkle chopped nuts on top layer, add enough nuts to just barely cover the phyllo. Top with four more sheets of phyllo, using the same method of grabbing two sheets, brushing one side with butter and place in pan butter side up. Add another layer of nuts. Repeat process of stacking four layers of phyllo and one layer of nuts until all the nuts are used up, end with a buttered top.</li>

Place in preheated oven and bake for 45 minutes or until golden brown.</li>

For me it brings up contrasting images sometimes I think of ladies in the 60's wearing flowery dresses and enjoying this cake at a ladies luncheon with a glass of spiked punch. Then other times I think of a little girls birthday party with this light pink cake as the center piece - although there is a pretty good chance the mom's might be enjoying some spiked punch at this event as regardless of the decade. <br />

I served my pink cake as part of a teacher appreciation lunch, where no spiked punch was served, although the teachers might have wanted some. While I was very happy to contribute this cake I was a little bummed that I didn't get to try a slice. I was hoping some would be left when I went in for clean-up, but no such luck. I guess it's a good sign when a cake quickly disappears, but I wasn't happy having only cake scraps with a little bit of the icing. <br />

From what I did have it was a rich moist cake with great chocolate flavor. The icing was buttery and sweet with a nice hint of raspberry. A perfect combination and a cake I will make again, but when I know I will be able to have a slice. <br />

Amanda participates in numerous food blog challenges and as a result has a lot of great recipes to choose from. <br />

I had decided at the beginning of the month to make something from Secret Recipe to bring to my book club group. It is one of those book clubs that is more focused on food and drink than actual book discussion. I knew this audience would appreciate the idea behind the Secret Recipe Club and the wonderful dishes that come from it. I had found a lot of great recipes I wanted to try, yet when it came time to actually making something I was short on time. I needed a dish that would be quick to fix, serve as a main dish, it had to be served at room temperature and it needed to be portable. So despite the numerous choices, I went for a classic recipe <a href="http://www.dancingveggies.com/blog/2013/05/tell-me-now.html">Sun Dried Tomato Pesto</a> over pasta.<br />

This pesto gives a wonderful burst of flavor and can be served in many ways. I served it over pasta, but it would be great with chicken, veggies or just smeared on bread. I altered Amanda's recipe slightly by adding some pine nuts and a fire roasted pepper. I like the texture the pine nuts provided and the pepper provided a little heat. Either way you make it, this is a great recipe. It is super easy to make, which is perfect for those nights when time is at a premium.<br />

<u>Sun Dried Tomato Pesto</u><br />

1 jar Sun Dried tomatoes in oil<br />
1 fire roasted pepper<br />
2 Tbsp. Pine nuts<br />
1/2 cup freshly grated Parmesan cheese<br />
1/2 cup fresh basil leaves (about 6-10 leaves)<br />
3 cloves garlic<br />
Extra Virgin Olive Oil<br />

Place all ingredients in food processor. Blend until mixture forms a thick paste. With processor running slowly pour in olive oil until paste thins out to desired consistency.<br />

Place chicken in a 3-4 quart slow cooker. Add broth garlic, onion powder and salt and pepper. Cook on low for 4-6 hours. Using a slotted spoon remove cooked chicken, allow to cool slightly. Remove any fat from chicken and broth. Using two forks shred chicken. Place shredded chicken back in slow cooker, add Caesar dressing and Parmesan cheese, stir until coated. Cook for an additional 15-30 minutes.</div>

When choosing the fruit I keep in mind, who I am working with and what fruit is in season. When working with the 4 year old kids in my daughter's preschool class I wanted them to work on cutting, so I chose fruit that would be easy for them to cut - strawberries, bananas, mango and kiwi were the answer. I am not very consistent about making them and having them available, but when I do it is always a wonderful treat to open the freezer and find them there. I made one change to Melissa's recipe, only because of what was available in my pantry. I didn't have enough whole almonds, so I roughly chopped what I had and then used some almond meal flour to finish the coating mixture. The chopped almonds provided a wonderful texture while the almond meal gave the tenders a nice thick coating. <br />

Preheat oven to 400. Lightly oil (or spray) a cooking sheet.</div>

In a small bowl beat eggs, almond milk and mustard together, set aside. In a large bowl combine chopped almonds, almond meal, salt and pepper. Dip a chicken tender first into egg/milk mixture then into the dry mixture. Place coated tender on baking sheet, repeat with remain tender. Place tenders in a single layer with space between each piece. </div>

Bake 20-25 minutes, depending on thickness of chicken. Using tongs flip chicken pieces half way through baking time.</div>

I wanted to make something that would be quick and easy to make and easy to eat while standing around chatting. I checked out <a href="http://www.egglandsbest.com/recipes.aspx">EB's great recipes</a> and I was very tempted by their Breakfast burrito, but I make a messy burrito and become a mess eating them. The <a href="http://www.egglandsbest.com/recipes/book/b/broken-yolk-sandwiches.aspx">breakfast sandwich</a> also sounded yummy, but the idea of cooking all those fried eggs was less than appealing. The solution scrambled egg sandwich. <br />

Since I was making a large batch I sped the process up a bit by using a blender. This also makes the scrambled eggs very light and fluffy by infusing a lot of air into the mixture, and air is the key ingredient to a good scrambled egg. <br />

After a whirl in the blender, they went in the pan for a quick scramble with some diced ham and shredded pepper jack cheese. I under-cooked the eggs slightly so that I could keep them warm in the oven without worrying about them drying out. These can be made with any size roll, but I opted for a small sandwich roll, lightly toasted, with the center hollowed out. A little sprinkle of cheese on top and they were ready to go.<br />

Over medium heat melt 1 tablespoon butter in large non-stick saute pan. Crack eggs into the container of a blender, add milk and a pinch of salt and pepper. Blend on medium speed until mixture is uniform in color and frothy, about 20 seconds. Pour into preheated saute pan. Sprinkle cheese and ham over eggs and gently stir with a rubber spatula. Once eggs are no longer liquid remove from heat, they should still look wet. </div>

This month my excuse is that I wanted to make the cake for an Easter egg hunt/Spring Celebration that friends were having. A honey cake and Spring fun sounded perfect together. I just wish we had the Spring weather to go with such a sweet cake. A couple of days into Spring and the temperatures are in the 30's and the sky is filled with clouds. I have loved most of the cakes that I have made from Julie Richardson's <a href="http://www.amazon.com/dp/1607741024">Vintage Cakes</a>, and this one is no exception. It is a light cake that isn't overly sweet despite the large amounts of honey used in the recipe - there is honey in the cake batter and then a drizzle of sugar, honey and almonds once it is baked. It is a very moist cake, but it is still sturdy enough that you can easily cut a small sliver if you happen to crave a sweet snack before bed. I poked holes in the cake before pouring the honey over the cake and it made for a wonderful burst of flavor. <br />

This is a great cake to experiment with as you can change the flavor slightly by varying the type of honey and nuts used. I used a clover honey and almonds, but think it would be wonderful with a lavender honey and pine nuts. <br />

Our neighbor is a character in the neighborhood, everyone knows him and he knows everyone. He often puts in requests for the "young guys" to have fire pits so he can join them and have an excuse for a shot or two of Crown Royal. It is known throughout the neighborhood that he has a love for the Crown, so it wasn't a surprise when his daughter asked if I could make a Crown Royal cake for his birthday.<br />

The cake was a chocolate and vanilla layer and was super easy to do, although my icing marbled when I applied it, which was super annoying. Since the cake wasn't very exciting I decided to do something that the birthday boy might appreciate a little bit more - Irish Car Bomb cupcakes. Now I'm not a big fan of the name, but the drink is fun and the cupcake is fabulous.<br />

I have made <a href="http://everydaymom23.blogspot.com/2011/03/stout-cupcakes.html">Stout cupcakes</a> in the past and they good. The stout is a perfect pairing with the chocolate, but you add a little whiskey and Bailey's and these cupcakes become great. I have written about them before and I know I will write about them again. They are not a CSA, they provide fresh, high quality produce year round. During the growing season they provide local produce as much as possible, but by going outside the growing area we can also get bananas, oranges and other produce that you don't normally find in Northern VA, but are staples in my kids' diet. <br />

When I get my weekly delivery I am always faced with the dilemma of using as many of the fruits and veggies as possible in one scrumptious dish or slowly rationing them out throughout the week. We recently received a box that contained eggplant and tomatoes and I knew I had to combine ingredients. It was as if they were reading my mind, I had been craving Eggplant Parmesan for a couple of weeks and then as if by magic the necessary ingredients appeared. I was so happy, but then came the hard part. I had to decide between traditional - layers with sauce- and a more simple version.<br />

<u>Deconstructed Eggplant Parmesan</u><br />
<u><br /></u>
2 eggplant, medium sized, cut into 1/2" slices<br />
2 eggs<br />
1 cup flour<br />
2 cup Panko breadcrumbs<br />
1 cup Breadcrumbs<br />
3 Tbsp. Italian Seasoning (see below)<br />
2 cloves garlic, finely chopped<br />
1 small onion, finely chopped<br />
1 pint cherry tomatoes<br />
1/2 cup red wine<br />
1 bunch fresh spinach (or 1 10 oz package frozen)<br />
16 oz Mozzarella, shredded<br />
1/2 cup grated Parmesan<br />

Preheat oven 375. <br />
<br />
Prepare three breading pans. In first pan combine flour and 1 tablespoon Italian seasoning, In the second pan add eggs and 2 tablespoons water, mix to combine. In third breading pan combine Panko, regular breadcrumbs and remaining 2 tablespoons of seasoning mix. Dip each slice of eggplant first in the flour, then in the egg mixture, finish with the breadcrumb mixture. Place each coated slice on a platter. Pour 3-4 tablespoons of olive oil a baking sheet with, place pan in oven 5 minutes to heat the oil. Once all eggplant slices have been coated place on hot baking sheet in a single layer. Bake for 15-20 minutes or until golden brown, flipping slices over half way through bake time. <br />
<br />
While eggplant slices are baking. Heat a saute pan, with 1-2 tablespoons olive oil, over medium high heat. Add chopped garlic and onion, cook for 5-7 minutes or until onions soften. Add tomatoes cook for 10 minutes or until tomatoes begin to burst. Add wine and cook for an additional 10 minutes. Stir in spinach and cook until soft. Remove from heat. <br />
<br />
Evenly divide mixture over baked eggplant slices top each slice with mozzarella and Parmesan. Place in oven for 10 minutes or until cheese melts and lightly golden. <br />

The cake turned out to be my baby girl's birthday cake. I would like to say that it was my plan all along to make the cake for her birthday, but really it was just procrastination. First I put off making the cake for the cake slice group and then I put off planning a cake for Edy's birthday - it's tough when your the third child. It was definitely worth the wait, though. As this is a wonderfully moist cake with just a hint of chocolate and a slight tang from the buttermilk - a perfect combination.<br />

Since this was a birthday cake I did do a little extra embellishment. When I have made red velvet cakes in the past I like to just frost the top of each layer, letting the sides show off their chocolaty red beauty. Although it was fun to reveal the red surprise waiting inside the fully iced cake. <br />

The only change I made to the recipe was the icing. Julie Richardson's recipe calls for a Mascarpone Cream Cheese Frosting, but I opted for a regular cream cheese icing. Not a big change, but using a Mascarpone cream cheese does provide a slightly sweeter finished product. <br />

As with past recipes from Vintage Cakes, I was really happy with this one. The recipe is easy to follow and the finished result was a tasty cake loved by the newly turned 4 year old, and everyone else who had a slice. <br />

Add a small ladle of batter, rotate pan so entire bottom surface is covered with batter, should be almost see through. Let cook for about 2-3 minutes then flip. Repeat with remaining batter. <br />

Then I make it and wonder why I haven't made it in such a long time. I get so wrapped up in my rice and quinoa side dishes that I forget there is a whole other world of sides out there. <br />

Polenta is super easy to make and can be used in so many ways - hot and creamy is my favorite, but if you let it cool and get nice and thick, then cut it in big chunks and throw it on the grill, oh so good I can feel the summer heat thinking about it. <br />

I got back on a polenta kick earlier this week with a goat cheese polenta served with orange chicken. The kids weren't fans of the goat cheese polenta - they like it when I keep it simple with just a little Parmesan - but the rest of the meal was a big hit. <br />

This wasn't anything that was celebrated when I was in school, but has become a big time party in some schools. My daughter's kindergarten teacher loves celebrating with the kids and can take any holiday and turn it into a wonderful memory where the kids not only have fun, but learn tons. <br />

As a room parent I was tasked with making a cake for the celebration, her only request was that it be shaped like the number 100. I spoke briefly with the other room parents, and discussed some ideas. I walked away with a vision in my head and was ready to get the supplies to execute my plan, when a couple of days later I was given a bag filled with candy and told to go make the cake. I felt like I was on an episode of <a href="http://www.foodnetwork.com/chopped/index.html">Chopped</a> - the candy edition.<br />

I am attracted to simple colors and pattern schemes. Before being given my challenge basket I had thought I would outline each cake using 100 M&M's per cake, like the number one in the picture. What I was given was - 10 licorice rounds, 20 Junior Mints, 30 red and brown peanut M&M's, 40 blue and green peanut M&M's, 50 Milk Duds, 60 Gum Drops, 70 Dark Chocolate M&M's, 80 Reese's Pieces, 90 Sour Patch Kids and 100 Jelly Beans. If you're counting that is a lot of candy. I made a couple of changes to what I was given because I wanted to have two cakes that were nut free, so I substituted the peanut M&M's with Hershey Chocolate bars and brown M&M's - I also did this so I could go back to my comfort zone of a simple color scheme and pattern.<br />

It took some work to get all the candy on the cakes, but it was a lot of fun to make. The kids were definitely impressed by the amount of candy, but I was even more impressed by how quickly 25 kindergartners ate the cake. Within 15 minutes there were only crumbs and those were being savaged over pretty quickly. It was a fun day and nice to be able to put smiles on so many little faces. <br />

Mix until butter and flour begin to clump and form pea sized pieces. Add one cup of the egg mixture and mix at lowest speed until ingredients are fully incorporated, then increase speed to medium high. Beat until mixture is light and fluffy, about one minute. Scrape down bowl. With mixer running at a medium low speed add remaining egg mixture in a slow steady stream. Once all the egg mixture is added increase speed to medium high for 15-20 seconds. Mixture will look slightly curdled. Divide batter equally between pans.
