Gift Idea - Turtle Popcorn

We are big fans of popcorn.  It is one of our favorite snacks and is made quite a few times a week.  We enjoy both microwave and stove-top.  The convenience of microwave popcorn is great, but nothing beats Whirley Pop popcorn.  While many make popcorn on the stove top because it is healthier, I make it this way for the flavor options.  Sweet or savory the flavor options for stove-top popcorn are endless

Most of the time I go for the quick and easy popcorn "recipes" - kettle corn, cheesy corn, spicy, etc. - but I also like recipes that really bump up the flavor and provide a little more punch.  When I saw this wonderfully delicious recipe while scouring Cravings of a Lunatic for my Secret Recipe Club assignment back in October I knew it was time to make some pumped up popcorn.  I didn't get a chance to make it, but have been thinking about it since then.

My plan was to make ONE batch and give it to the kids' teachers as a little Thanksgiving treat.  That one batch was quickly devoured and I ended up having to make another batch.  I got smart with the second batch and quickly packaged it up before it could disappear as well.

This crunchy, chewy, nutty, caramely, chocolaty popcorn makes a great treat and will definitely be made again - and again, and again- as gifts and for our own snacking pleasure.  And I recommend that if you decide to make it, plan on making a double batch right from the start.

Turtle Popcorn

3/4 cup popcorn kernels
1 Tbsp. popcorn oil (or vegetable oil)
1 tsp. salt
1 cup pecans, rougly chopped
1 cup butter
2 cups firmly packed brown sugar
3/4 cup corn syrup
6 oz. semi-sweet chocolate chips
1 tsp. vanilla extract

Directions:
Preheat oven 200.
Over medium high heat, heat 1 tsp oil in whirley popper or large heavy bottom pan.  Add kernels.  Stir continuously until popping has stopped.  Dump popcorn into large roasting pan, add salt and pecans, toss until nuts are evenly distributed.  In large saucepan combine butter, brown sugar and corn syrup.  Over medium high heat bring this mixture to a boil.  Keep at a boil for 5 minutes. Remove from heat.  Add chocolate chips, stir until melted and smooth.  Pour over popcorn.  Toss gently with wooden spoon until popcorn is coated.  Place in preheated oven and bake for 30 minutes, stirring occasionally.  Remove from oven.  Pour popcorn onto parchment paper until cool.

Buffalo Chicken Wings

I love buffalo chicken wings.  Messy spicy sauce with cool blue cheese dressing - yumm!  I remember my Dad making them for parties when they were a new fad food.  In college my roommates and I started many evenings out at a local bar that served the best wings, we would often finish the night here as well.  I am constantly searching for a place that comes close to The Monopole, but I still haven't found it.

Despite my love for wings I have never tried to make them. Last weekend I decided to finally give it a try, maybe I could make wings that could compare to what I remembered from college.  The result - a total flop.  Now I am just craving wings even more.  The sauce never stuck and the result was a boring wing with no flavor.  We still managed to eat them all, but that was because of the blue cheese dressing which was very yummy.

I am so sad about this flop, it had the makings of a perfect Fall afternoon feast.

I think wings are best when fried, but I know they can also be good when just baked.  So what happened?  Here is the recipe I used.  I forget exactly where I found it, but it is comparable to many others I looked at.  Any suggestions on why these were such a flop?  Anybody have a good no fail recipe to share?

Buffalo Chicken Wings

3 lbs Chicken Wings
1/2 c. Butter, melted
1/2 c. Franks Red Hot Sauce
2 1/2 tsp. Tabasco Sauce
1 1/2 Tbs. Chili Powder

Place wings in single layer on baking sheet.  In 375 degree oven bake until wings are cooked through and slightly crispy.

While wings are cooking combine remaining ingredients in large bowl.  Add cooked wings and toss to coat thoroughly.  Return coated wings to baking sheet.  Lower oven temperature to 300 and bake wings for an additional 10 to 15 minutes.

Blue Cheese Dressing

2 oz. Blue Cheese, crumbled
1/4 c. Buttermilk
1/4 c. Sour Cream
1/4. c. Mayonnaise
Juice of 1/4 lemon
Salt and Pepper to taste

In small bowl combine all ingredients.

Car Food and Special Treat

Every summer I throw the kids in the car for a get together with two of my girlfriends from high school, and their 5 kids.  It is always a fun vacation, but very chaotic - putting 8 kids between the ages of 2-6 together can produce a little craziness.  We are scattered across the east cost, so these get together always involve lots of driving, which means lots of snacks in the car.  When I am doing solo road trips I like to get up early and get on the road, which means I need to do breakfast in the car.  I usually do mini bagels, they are quick and easy and my kids love them, but this year I decided to do something different.
My kids have two loves, jam sandwiches and fancy sandwiches.  When these loves are combined I have very happy children, which is just what I need when faced withe an 8 hour road trip.  These sandwiches are great.  They are quick and simple, the variations are endless and my favorite part the kids can make themselves.

To make these fancy treats:
1.  Choose your favorite jam/jelly/marmalade and spread on one slice of bread.

2.  Dice, or thinly slice whatever fruit is ripe and in season, place on top of the jelly covered bread.

3.  Top with a second slice of bread.  If you happen to have a Pampered Chef sandwich cutter now is the time to break it out.  If you don't have one a cookie cutter and fork will work the same.  Simply cut your sandwich and crimp edges together.

4.  Finish by buttering the top slice.  I had just received a sample of  Land O'Lakes Cinnamon Sugar butter spread, which was really yummy and recommend giving it a try, but if you don' have it regular butter and a sprinkle of cinnamon sugar works just as well.  Place in a 350 oven.  Bake until lightly brown.

These are great for an afternoon snack or as an early morning breakfast when starting an 8 hour road trip, and as I said the fillings are endless.  Peanut butter and chocolate, chocolate and marshmallows, cheese and tomatoes.  They can be topped with butter, cinnamon and sugar or olive oil, cheese and herbs.  Sweet or savory, you really can't go wrong.

If you would like to try Land O' Lakes new cinnamon sugar spread, just leave a comment by August 8th.  I will pick a winner and Land O' Lakes and My Blog Spark will send the winner the wonderful prize package shown below.

Secret Recipe Club - July

It is time for the Secret Recipe Club! This month I was introduced to Judee at Gluten Free A-Z.   I usually don't spend a lot of time on blogs dedicated to allergy or gluten free diets.  My husband has some food allergies, but they don't effect our daily diet so they aren't sites I seek out.  After spending time on Judee's blog I might be more apt to seek out similar sites.  Her blog is filled with lots of great recipes and healthy living suggestions.  It was tough making a decision on what to make.  Her quinoa salad looked great and it is a flavor combination I love, but I wanted to try something new and different.
I decided to try the Gluten Free Banana Oatmeal Cookies.  I decided on these because they sound great and because I have been looking for new recipes that kids can easily make on their own for a snack.  I have a similar 3 ingredient recipe for Peanut Butter cookies that I recently taught them, and that they love, and thought this would be a good addition to their recipe collection..
The kids had fun making these cookies, although Maggie was a little put off by our super ripe bananas.  She definitely eats with her eyes and the browning of the bananas was a little too much for her.  The kids are use to a sweeter cookie so we decided to experiment with the recipe a little by adding some peanut butter and honey.  These cookies were different from what the kids are use to, but they had fun making them and like having another recipe that they can do on their own.
