Scrambled Eggs w/ an Egg-celent Giveaway

I live in a pretty social neighborhood, it seems as if someone is always hosting a fire-pit, wine party or some type of get together.  These everyday type of gatherings are always fun and we all enjoy them, but what the neighborhood really enjoys is a big all out party.  These are usually family friendly celebrations, that have grown in size year to year.  Our biggest is Halloween, but Easter is making a good run for it and may possibly take over


After a couple of months of hibernation everybody is ready to get out again and catch up with neighbors and what better way to do that than with a huge brunch and lots of drinks.  Like all good celebrations there is a major focus on food.  We have the traditional egg hunt and games for the kids but really, it is the food that brings us all together.


I usually bring a coffee cake or some type of baked good, but this year, with some help from Eggland's Best - and these wonderful goodies


I decided to bring an egg dish.  While I love my buttery, sugary coffee cakes I wanted to provide something with a little more nutritional value and since not all eggs are created equal I turned to EB

 I wanted to make something that would be quick and easy to make and easy to eat while standing around chatting.  I checked out EB's great recipes and I was very tempted by their Breakfast burrito, but I make a messy burrito and become a mess eating them.  The breakfast sandwich also sounded yummy, but the idea of cooking all those fried eggs was less than appealing.  The solution scrambled egg sandwich.


Not very fancy, but super yummy.

Since I was making a large batch I sped the process up a bit by using a blender.  This also makes the scrambled eggs very light and fluffy by infusing a lot of air into the mixture, and air is the key ingredient to a good scrambled egg.


After a whirl in the blender, they went in the pan for a quick scramble with some diced ham and shredded pepper jack cheese.   I under-cooked the eggs slightly so that I could keep them warm in the oven without worrying about them drying out.  These can be made with any size roll, but I opted for a small sandwich roll, lightly toasted, with the center hollowed out.  A little sprinkle of cheese on top and they were ready to go.

Light and Fluffy Scrambled Egg Sandwich

5 eggs
5 Tbsp. Milk
1/4 cup grated pepper jack cheese
1/4 cup diced ham
Salt and pepper
2 small Hoagie rolls, with center removed, lightly toasted

Over medium heat melt 1 tablespoon butter in large non-stick saute pan.  Crack eggs into the container of a blender, add milk and a pinch of salt and pepper.  Blend on medium speed until mixture is uniform in color and frothy, about 20 seconds.  Pour into preheated saute pan. Sprinkle cheese and ham over eggs and gently stir with a rubber spatula. Once eggs are no longer liquid remove from heat, they should still look wet. 

Fill toasted rolls with egg mixture.  Sprinkle with additional cheese, place in preheated oven for 3-5 minutes or until cheese melts

Melissa & Doug Terrific Twenty List and Giveaway



It's November which means Christmas.  I am always a procrastinator when it comes to Christmas shopping. I wait to the last minute then scramble around.  When I am in scramble mode I turn to those tried and true sites where I know I can find good reliable gifts.

One of my favorites is Melissa and Doug.  Not only do my kids love their products, but so do I.  They are quality products that not only withstand lots of use, but also grow with my children.  Their wooden play food is a staple in the kids kitchen and is loved by all - especially the sushi set which my son got when he was about 2 and is still a favorite 5 years later.

Melissa and Doug just released their Terrific Twenty Holiday Gifts for 2012 and it really is a terrific list.  There is something for children of all ages and interests.  I know the Fashion Design Activity Kit, and Metal Grocery basket will be under our tree this year and I am sure a few other M&D goodies will also be there as well.

Cereal and Star Wars

This summer General Mills sent me a variety of cereals to sample.  Some of the cereals we received where types I normally wouldn't purchase, like Lucky Charms and Trix.  Other samples, like Cheerios and Chex are household favorites.  Ever since I received these samples I have been thinking about and noticing cereals more often and I have come to the conclusion my family eats a lot of cereal.

We don't just eat cereal for breakfast.  I throw it in the kids lunch, there is often a baggie full of cereal in my bag for snacks, sometimes there is even a box of it floating around the car.  Plus I love cooking with it, it has become one of my favorite breading items.  You can really change up a boring piece of chicken just by varying you cereal choice.

I know our cereal uses aren't unusual but I never realized just how much cereal we use and for some reason I am fascinated by this.  I think General Mills somehow secretly sensed this fascination and decided to mess with me even more by sending me yet another amazing package.  This time they sent full sized boxes of Honey Nut Cheerios, Cinnamon Toast Crunch and Lucky Charms.  That alone would have been great - they are all great snacking and cooking cereal - but it got better when the three boxes are put together you get this.


Again this was great I was happy with the cereal my kids had a great time with the boxes, but they also included a $25 gift card to Walmart, which will be used not for something practical, but to buy the full Star Wars collection.  Our discs are very scratched up and no longer watchable.  My Star Wars obessessed children find this very frustrating and will be very happy on Christmas morning when they find the new collection under the tree.  Now if Santa will just bring us a Blue-ray player to go with it we will all be happy.

Hotel Living

My kids are enjoying hotel life, we aren't on vacation they are just loving the cereal samples we recently received.   They are finding great joy in eating their breakfast out of the little bowls the cereal is packaged in and love pouring the milk out of the pitcher instead of the boring milk container.  I never thought this simple package would be such a big hit.  General Mills and Myblogspark has offered to give one of these cool prize packs to one of my readers, so if you want to score big points with your kids please leave a comment here.
